Vegan Rice and Beans

Ingredients

  • 1 Onion Medium
  • 1 Cup Spinach Chopped
  • 1 Bell pepper Medium and any color
  • 1 Cup Rice
  • 1 Can Diced tomatoes 10 oz Can
  • 1 Can Black beans 15 oz Can
  • 2 Tbsp Paprika
  • 2 Tbsp Cumin
  • Salt and pepper To taste

Instructions

  • Cook the rice in a rice cooker or on a stove top.
  • Dice the onion and bell pepper. Chop the spinach.
  • Sauté the onion, bell pepper, and spinach.
  • Mix rice, beans, onion, bell pepper, spinach, cumin, paprika, diced tomatoes. Add salt and pepper to taste. Enjoy!
