Vegan Pinwheels With Hummus

Ingredients

  • 1 Spinach tortilla Large
  • 3 Tbsp Hummus
  • 1/2 Avocado
  • 1/4 Bell pepper Sliced
  • 1/4 Cucumber Ribbons (thinly sliced)
  • 1 Cup Mixed salad greens Roughly a handful
  • Salad dressing for dipping Optional

Instructions

  • Slice cucumbers and bell peppers and set aside.
  • Lay tortilla flat on the cutting board.
  • Spread the hummus evenly across the entire tortilla.
  • Layer mixed greens, cucumber, bell pepper, and avocado across the tortilla evenly.
  • Tightly roll the tortilla, then slice the wrap into 1-inch pinwheels.
  • Pop them in the fridge to chill. Serve them with salad dressing and enjoy!
