Vegan Pinwheels With Hummus

Servings: 7 Pinwheels

Ingredients

  • 1 Spinach tortilla Large
  • 3 Tbsp Hummus
  • 1/2 Avocado
  • 1/4 Bell pepper Sliced
  • 1/4 Cucumber Ribbons (thinly sliced)
  • 1 Cup Mixed salad greens Roughly a handful
  • Salad dressing for dipping Optional

Instructions

  • Slice cucumbers and bell peppers and set aside.
  • Lay tortilla flat on the cutting board.
  • Spread the hummus evenly across the entire tortilla.
  • Layer mixed greens, cucumber, bell pepper, and avocado across the tortilla evenly.
  • Tightly roll the tortilla, then slice the wrap into 1-inch pinwheels.
  • Pop them in the fridge to chill. Serve them with salad dressing and enjoy!

Salad dressing: This is totally optional, but I enjoyed having a little dipping sauce to go with my veggie pinwheels. I found a creamy poppy seed vegan dressing that worked perfectly. You could also make a balsamic dressing to dip the veggies in prior to wrapping your pinwheels if you want the flavor perfectly layered throughout the pinwheels.

Spinach tortillas: Any tortillas will do! I like to add a little extra veggies wherever possible, and spinach tortillas are an easy way to do that. Personally, I find that they taste like regular tortillas and don’t notice any kind of “spinach taste” to them.

Tahini: If you don’t like garbanzo beans or just want something a little lighter, you can go with tahini. I like to add a splash of lemon and even garlic powder to give it a boost of flavor. Spread it onto your pinwheels just like you did your hummus. This will help to keep your pinwheels perfectly smooshed together and not unravel.

Glass and stainless steel food containers are my go-to for meal prepping and leftovers because I find that they always have a tight seal and keep everything perfectly fresh. I have had the circular U-Konserve container below for, honestly, like 8 years at this point, and it consistently keeps my salad dressings from spilling when I pack my lunch for work.

I wasn’t able to find the exact heart-shaped plates I have, but I did find the ones below that honestly would work better for a party! It’s larger, and I love that there’s a space to put dips as well.

The only tip I have with plating pinwheels is to pop them in the fridge 30 minutes before your party so they stay together better. You can, of course, use toothpicks to keep them in place as well! These toothpicks have flowers on them, so cute!

To prevent them from getting soggy, you can:

  • Spread the hummus all the way to the edges (it acts as a moisture barrier).
  • Pat cucumbers and peppers dry before layering.
  • Chop up your veggies and store them separately. Then, in the morning, roll them up into the tortilla. It isn’t the simplest meal prep lunch option, but it is a fresh one, and that takes a little more effort!
  • Wrap them tightly in beeswax wrap or store them in an airtight container.

Beeswax wrap is a really awesome alternative to plastic wrap if you haven’t heard of it! It’s great because once you’re done using it, you can wash it off and reuse it again rather than throwing it away like regular single-use plastic wrap. This cuts costs, and it’s kind of nice having your food wrapped in a more natural option than plastic.

How to get pinwheels to stay closed?

This is the most common issue when making pinwheels! They always find a way to unravel, especially when they are sitting out at a party.

The key to great tortilla pinwheels is balance.

Here’s how to keep your pinwheels tight:

  1. Spread your hummus fully to the edges. The hummus acts like glue and can keep everything stuck together.
  2. Don’t overfill your wraps with ingredients, or else they will naturally pop open.
  3. Roll your wraps as tightly as possible without them tearing.
  4. Wrap your pinwheels tightly in beeswax wrap. Wrapping them in wax paper and securing it with a rubber band may work as well. Never tried that, but let me know if it works!
  5. Let the pinwheels chill in the fridge for 15–30 minutes before slicing. Chilling firms everything up and helps them hold their shape!
