Vegan Sheet Pan Harvest Bowl Recipe
Ingredients
- 1 Sweet potato Large
- 1 15 oz Chickpeas
- 1 lb Brussels sprouts Halved
- 1/2 Medium Red onion Diced
- 1/2 Cup Dried cranberries
- 1/2 Cup Pecans Chopped
- 2 Tbsp Olive oil
- Salt, pepper, garlic powder, paprika, cinnamon To taste
Instructions
- Dice sweet potatoes.
- Halve brussels sprouts.
- Dice onions.
- Drain and rinse chickpeas.
- Chop pecans.
- Put brussels sprouts, sweet potatoes, onions, and chickpeas in a large bowl. Toss ingredients with olive oil and prefered spices.
- Put ingredients on a sheet pan and cook at 400°F for 35 minutes. Toss ingredients halfway through cooktime.
- In the last 5 minutes add cranberries and pecans. Toss ingredients.
- Enjoy!

Sweet potato: Squash or pumpkin is a great swap if you don’t have sweet potatoes. They still offer that fall feel and keep the soft texture profile of the potatoes.
Red onion: Yellow onions are totally fine to use! They won’t have as strong of a flavor, but onions are always a flavorful addition for meal prep.
Brussels sprouts: Sometimes I use broccoli or cauliflower when making this recipe, or even add it in with the brussels sprouts.
