Vegan Sweet Potato Taco Recipe Using Tofu Taco Meat For Meatless Meal Prep

I am SO excited to share this recipe because I’ve been making it for at least a decade, and it is one of those recipes I am so glad I found early in my plant-based journey!

When you don’t know what to cook for the week, need a budget-friendly option, or just don’t want to spend a bunch of time in the kitchen, this is the recipe you need to memorize.

Luckily, it’s made with only about five ingredients and is super easy to customize based on your preferences.

Whether you turn it into stuffed sweet potato taco bowls or wrap it up in a tortilla, this recipe 100% deserves a spot on your meal prep list.

Vegan Sweet Potato Taco Recipe

Ingredients

  • 1 Can Black beans 15oz Can
  • 1 Block Tofu Firm
  • 2 Bell peppers Diced
  • 2 Sweet potatoes
  • 1 Packet Taco seasoning mix
  • 4 Tortillas
  • Olive oil A splash

Instructions

  • Dice the bell peppers. Rinse the black beans. Press excess water out of the tofu.
  • Slice the sweet potatoes in half. Lightly cover them in olive oil. Bake them face down in the oven at 425℉ for 45-55 minutes.
  • Heat the tofu in a pan with a splash of olive oil on low to medium heat. As the tofu cooks, use a fork to break the block of tofu into crumbles. Occasionally, mix the tofu so it doesn't stick to the pan. Cook for 8 minutes.
  • Sprinkle the taco seasoning into the tofu and ensure it's coated evenly. Add the black beans and cook for 2 more minutes. Continue to mix as it cooks.
  • Add a light drizzle of olive oil to your diced bell peppers. Pop the peppers in the oven, an air fryer, or stove top pan until they are your desired texture.
  • Add your sweet potato, peppers, tofu/black bean mixture to your tortilla. Enjoy!

Tofu: The star of the show! Tofu, and specifically FIRM tofu, is what makes this recipe super filling and protein-rich.

Technically, you could use soft tofu, but I do think that if you want a similar texture to beef taco meat, the firm option is the best. You don’t want your taco to have mushy filling!

If you want the texture to be even better, use a tofu press to really extract all of the extra liquid. You can also rest a plate on top of your block of tofu to release the water as well.

Black beans: For an added protein boost, toss in a can of rinsed black beans! You could also use pinto beans if you don’t have or like black beans.

Bell pepper: For a bit of greenery and veg, I used a diced green bell pepper. You could truly use any color of bell pepper or your other favorite vegetables (onion, corn, tomatoes, spinach etc!).

Taco seasoning mix: Cut down your cook time by simply using a taco seasoning mix packet! I love having these in my pantry for when I don’t feel like measuring out individual seasonings.

Sweet potato: I love how the sweet potato brings a touch of sweetness to a traditionally savory meal! You could totally swap it out with a regular potato if you don’t have a sweet one on hand.

Tortilla: I feel like anything wrapped in a tortilla ends up tasting good! It is totally optional though, and you can enjoy this recipe in a bowl. I talk more about this later in the post, but sweet potato taco boats are a fun alternative as well. Scoop out your sweet potato or bell pepper to create a “boat” to stuff your various ingredients into!

*Toppings: These are totally optional, but if you want to spruce up your taco or bowl, consider topping it with corn, avocado (or guacamole), cherry tomatoes, lettuce, hot sauce, nutritional yeast, vegan sour cream, etc.!

I love how customizable this recipe is, whether you want it simple and quick or with more variety! This also helps to keep things interesting if the thought of eating the same thing 4 days in a row sounds terrible to you.

All you need is firm tofu and your seasoning taco mix to make this incredibly easy vegan taco meat!

Truly, this recipe has been a lifesaver so many times when I was exhausted and just needed to throw dinner together. It works great in salads, wraps, bowls, tacos etc.!

You can simply place your block of tofu in a pan on the stove and add a bit of olive oil. Break up the tofu with a fork until it starts to crumble. Sprinkle in your taco seasoning mix, ensuring each crumble gets some flavor, and that’s it!

You’re left with a filling and flavorful protein source that you can rely on when you need a quick dinner idea!

You can lower costs even more by:

  • Using homemade taco seasoning rather than a packet (the mix is mostly for convenience).
  • Using whatever veggies you already have on hand (don’t forget to check your freezer!)
  • Buying bulk and store-brand tofu and tortillas.
  • Skipping the tortillas and making bowls/boats out of the bell peppers or sweet potatoes.
  • Opt for dried black beans as they tend to be cheaper than canned.

Stuffed vegan sweet potato taco bowl

When I was originally thinking of what I could cook this week, I wanted to make vegan sweet potato taco bowls!

The only problem was when I got home and started prepping everything, I realized that I had purchased some of the smallest sweet potatoes possible! Kind of hard to stuff a small sweet potato and make it look good enough to post on the site haha.

Anyways, whether you pick up a large sweet potato or a large bell pepper, both can make yummy “boats” to carry your other ingredients.
