How Do You Meal Prep For a Week of Vegan Lunches

The plant based lunch ideas in this post are very diverse just to offer options but if I were prepping lunches for the week I would probably choose a couple of these options and repeat them for the week. So really, this list of ideas could last you a couple months!

Here are a few more helpful tips for meal prepping plant based lunches:

O Be mindful of how long different foods can stay in the fridge for aka don’t prep 7 days out unless you are going to freeze some of your meal preps.

O Like I mentioned before, prioritize foods you love or can tolerate in your prepped lunches. You should be looking forward to lunch and what you get to have for lunch! That is the secret key to making meal prep sustainable.  

O Focus on whole foods but don’t deprive yourself of the fun foods like chocolate, processed foods etc. Food isn’t evil. Everythign in moderation. 

O BUY THESE BOXES I have tried to meal prep so many times but it wasn’t until I bought these boxes that I finally was able to meal prep consistently. I don’t want to promote overconsumption but these boxes were a great find and changed the meal prep game for me. For full transparency the lid on these boxes has some issues closing. I do love that they are made form recycled plastic and are a nice neutral color though!

The Best Plant Based Meal Prep Ideas

Protein Rich Kale Salad

This is so cliche but you can’t have a list of plant based meal prep ideas without a kale salad on the list! 

The kale salad is just a bag salad but I added quinoa, chickpeas, pumpkin seeds and a simple salad dressing. 

The snacks on the side include a Made Good granola bar and some Himalayan salt dark chocolate almonds. 

Super Simple Pasta

A very simple pasta meal prep lunch idea

I was almost embarrassed to include this pasta meal prep but it is a realistic lunch that I’m sure we all throw together from time to time. 

All it is is spaghetti noodles, broccoli, olive oil/seasonings with a mandarin orange and a mini protein bar. Super simple. Maybe not the most nutritious lunch but it gets the job done! 

Veggie Packed Bagel

This vegan lunch idea is based off of my favorite breakfast sandwich from a local cafe. It’s super nutritious and a thick bagel makes it filling and just extra yummy. 

This plant based lunch includes an everything bagel with hummus, avocado, arugula, tomato and cucumber. On the side there is a mandarin orange and pistachios. I know this post includes a lot of mandarin oranges but add whatever fruit you prefer!

Green Pea and Basil Ravioli and Simple Salad

I think this is my favorite lunch on the list! 

It includes ravioli from vegan creator, Tabitha Brown’s Target collection of grocery items! The ravioli is green pea and basil and was SO yummy. I highly recommended picking it up and giving it a try. To flavor it up a bit more I added broccoli, olive oil and seasonings. On the side I had a simple salad with avocado and cranberries. I also had the bbq flavored corn snacks! They are really good and a nice alternative to chips if you’re looking for something crunchy and flavorful! They also come in other flavors too.

Super Simple Stir Fry

Stir frys are so simple to whip up and are always filling! I cheat and use whatever bottle of stir fry sauce I can find which keeps the recipe time under 15 min. I made air fryer tofu and a mixture of onion, peppers and broccoli but use whatever veggies you prefer!

I just paired it with some fruit and dill pickle cashews!

Whole Food Plant Based

There are so many delicious plant based meats out there but sometimes just a simple whole foods plant based meal is the best option (and much cheaper!). 

This lunch includes roasted sweet potato, grilled zucchini, mushroom pilaf, and broccoli. On the side there are dill pickle flavored cashews and a simple mix spring side salad. 

Protein Rich Quinoa Salad

Quinoa is amazing because it can be enjoyed warm or cold. If you don’t have a microwave at your work or wherever you bring your meal prepped lunch you can still enjoy this salad! 

The quinoa salad includes tri colored quinoa, corn, black beans, diced tomatoes and a taco seasoning packet. On the side there is a “Tex Mex” nut mixture and dried mango. 

Falafel Salad

Having beans for your main protein source everyday as a vegan can get pretty boring. Switch it up with having beans in a different form, falafel. 

The salad is just a bag salad (same one as mentioned before) with air fried falafel balls. On the side there is mandarin oranges and corn chips.
