You can’t have a list of crockpot meals without having a chili recipe! I love chili because it is easily customizable, whether you want a ton of variety or even just want to keep it basic.
To keep things super simple don’t be afraid to rely on canned corn, tomatoes, and beans.
Fresh produce is always great, but sometimes when meal prepping it makes things a million times easier to pop open some cans, dump them in your crockpot, and let it whip up a yummy hearty meal!
If you want to stretch your chili a bit more, serve it with rice, sweet/white potatoes, cornbread, or tortilla chips. Chili is the ultimate slow cooker recipe and freezes perfectly!

Slow cooker pumpkin, chickpea & lentil curry
If you’re looking for a slow cooker recipe that has extra protein, this one will be perfect for you! It has both lentils and chickpeas that will keep you full but not give you that weighed down feeling.
Normally, when I make a similar curry recipe I just stick to garbanzo beans, but I love that this recipe has pumpkin in it to make it even more hearty!
With just a few seasonings and some coconut milk, this recipe has a unique flavor to mix things up if prepping veggie soups gets too redundant!
Sometimes I skip the garnishings because I want the most basic recipe possible, but not with this one! The cilantro and lime are a must to perfectly round out this dish!

I like to eat rice and beans as is, but the nice thing about prepping this recipe is that you can include taco shells, tortillas, or lettuce wraps if you really don’t love having the same exact meal day after day.

Have you tried jackfruit yet?! I have been blown away by how much the texture mimics pulled pork.
I love that this recipe is a break from classic crockpot soups and stews, but is still able to be made in a slow cooker for convenience. These jackfruit tacos are the perfect swap to classic black beans or tofu tacos which is how many vegan style tacos are made!

Most of the meals on this list are pretty filling, but sometimes, a light meal prep lunch is needed so I wanted to include this butternut squash soup as well.
If you do end up wanting to make it a bit more filling, you can always puree some garbanzo or white beans that blend perfectly into this soup!

The best food storage containers are the ones you already own!
But if you are in need of some new ones, these are my top recommendations. I prefer to use glass, and having a tight seal is a must for food safety and freshness!
If you don’t feel like upgrading your current food storage, you can always repurpose glass jars (like from salsa, peanut butter etc.) to put your meal prep in as well!
