Light & Colorful Make Ahead Spring Dessert Ideas For a Crowd
This post is all about the best spring dessert ideas for a crowd.
As I started planning my spring desserts, my goal was to find options that were light, colorful, and simple to adapt into vegan-friendly treats, so no one feels left out at the dessert table!
Think bright berries and citrus, soft floral flavors, and fresh spring herbs, all turned into individual-sized desserts that are perfect for grab-and-go serving.
These treats include classic pastels and cheerful spring colors, making them ideal for Mother’s Day, Easter, picnics, brunches, or tea parties.
Even better, many of these desserts can be made ahead of time, so you can focus on hosting instead of stress baking in the kitchen!

Best Spring Dessert Ideas For a Crowd
Vegan rosewater tiramisu (no bake!)
When hosting a big spring brunch, it can be super nice to finish it off with a simple, no-bake treat!
Even better, this tiramisu is vegan, which ensures your treat includes everyone! Dairy-free treats are anything but bland, and this rose water-infused dessert proves just that.
As you decorate your spring brunch dessert table with beautiful bouquets, don’t forget to sprinkle your desserts with a few rose petals!

Mini lemon bundt cake with blueberry glaze
Everything about these mini bundt cakes just screams spring tea party to me!
From the zesty lemons to the pop of pink from the berries, these little bund cakes make the perfect sweet treat to serve at a spring party.
To make things even easier, you can pick up these mini bundt cake molds that are made of silicone. I love that you can pop them in the dishwasher and they don’t take up a bunch of space like metal bundt cake molds.

Easter cookie bars
Sometimes, when hosting, it’s better to just stick to classic crowd-pleasing desserts like chocolate chip cookies that you know most everyone will love.
These Easter bars are even easier, though, because you can simply make them in a pan, divide them up, and serve! I also like that these cookie bars come out a bit thicker than traditional cookies.
I couldn’t find vegan pastel colored chocolates, but I did find these vegan pastel colored almonds!

Lemon bars
These lemon bars pack a zesty punch while the crispy base mellows them out. If your guests enjoy something a bit more sour, these lemon bars are the way to go.
I also love that this creator offers a way to make them vegan as well!
The bright color actually comes from turmeric powder, which is a really great option if you are trying to stick to more natural dyes.

Strawberry crunch cupcakes
I have never used strawberry powder before, but I think it is going to be my new obsession! I love that it adds a pop of color to these classic cupcakes, but it also maintains a consistent flavor throughout the entire treat.
If you decide to make these and want them to be vegan, here is a great buttercream frosting to use. I always find it really hard to find vegan frosting at my local shops, so I was glad to see this one online.
I try not to get everything online, but sometimes when making specialty desserts, that’s the best option!

Carrot cake poke cake
If you’re someone who loves extra icing, then you are going to love poke cakes.
Instead of the icing just sitting on top, the cake is poked all over so the icing melts deep down into every layer. That means every bite gets a burst of sweet, creamy flavor!
Poke cakes are also perfect for serving a crowd. They’re baked in a pan, easy to slice, and simple to plate individually, so guests can grab a piece and go without the hassle of cutting and serving a traditional layered cake.
To make things even easier, pick up a vegan carrot cake mix to cut down on cooking time!

Lemon lavender cookies
If you’re looking for a dessert that isn’t super sweet, this one’s for you!
They’re cookies, so of course, they have a bit of sweetness, but they also have a grounding, earthy flavor from the lavender petals.
And of course, a bit of lemon to stay within the poppy spring theme!
I think these cookies would be perfect for a Mother’s Day brunch with a cup of tea. It’s simple, soothing yet still sweet.
